Evgenios Katsanidis received his basic degree in Food Science and Technology from the Department of Agriculture, School of Geotechnical Sciences, Aristotle University of Thessaloniki and his master’s degree (M.Sc.) in 1995 and his doctorate (Ph.D.) in 2000 in Food Science from the Department of Food Science and Nutrition, University of Minnesota, USA with a research scholarship. He worked as a technical consultant for various food companies and from 1999 to 2001 in the Research and Development Department of Pillsbury (Minneapolis, Minnesota, USA).
His research interests include the development of new technologies in the processing, preservation and quality assessment of meat and fish products with the aim of optimizing quality, the development and implementation of innovative fat replacement systems, the design and development of new products and the determination of the shelf life of these foods and food packaging.
He has supervised 17 master’s theses (15 completed), 2 completed doctoral theses, 2 postdoctoral researchers and has published 44 research papers in international peer-reviewed scientific journals (h-index: 19), various chapters in books and volumes and has more than 1200 bibliographies. In addition, he participated in 15 research programs (Prima, ELIDEK, etc.) and was scientifically responsible for 10 of them.
