Eleni Malissiova is a graduate of the Veterinary Medicine Department of the Aristotle University of Thessaloniki, majoring in Food Hygiene and Technology of Animal Sourced Foods since 2002. She holds two postgraduate degrees, MSc Food Safety, Hygiene and Management (University of Birmingham) and MSc European Food Regulatory Affairs (Ulster University), while she holds a PhD in Milk Hygiene with an emphasis on nutrition and health claims of organic milk, from the School of Medicine of the University of Thessaly. Eleni Malissiova has over a decade of professional experience in Greece and abroad, both in the private and public sectors, as well as teaching experience at undergraduate and postgraduate levels in Greece and abroad, as well as in adult vocational education.

Since 2010, she has been serving in higher education, initially at the Department of Food Technology of the Technical University of Thessaly and since 2019 at the Department of Animal Production Science of the University of Thessaly, where she teaches Technology and Quality Control of Milk and Products, Technology and Quality Control of Meat, Food Safety, Quality Assurance and Food Legislation, as well as Professional Ethics. She has significant research work with publications in prestigious international journals, conference presentations and presentations as an invited speaker in Greece and abroad, while participating in and/or coordinating a series of research and educational programs.

Sandra Martín-Peláez is a permanent Assistant Professor at the Department of Preventive Medicine and Public Health at the University of Granada (UGR, Spain).

She holds a degree in Biology and Food Science and Technology from the UGR, and a PhD from the Autonomous University of Barcelona (UAB), Spain.

Her main research area focuses on the interaction between the gut microbiota and dietary components in human and animal health, at the molecular, preclinical and clinical levels. Her research has been carried out in the United Kingdom (University of Reading), Spain (UGR, UAB, Hospital del Mar Medical Institute, University of Barcelona, ​​and Molecular Biology Institute of Barcelona) and Greece (University of Thessaly).

She has participated in 15 research projects, one as principal investigator. She has published 39 research papers in peer-reviewed journals, 4 book chapters and 24 presentations at national and international conferences (Scopus: h-index 20, 1404 citations). Supervisor of one PhD, 8 MSc and 10 BA theses. Topic Editor of the journal Nutrients.

Alexandra Maria Michailidou is an Associate Professor of Food Science and Nutrition in the Department of Food Science and Technology, Department of Agriculture, Aristotle University of Thessaloniki.
Her teaching work includes teaching courses in the scientific fields of Nutrition and Metabolism, as well as Food Chemistry and Biochemistry, at undergraduate and postgraduate levels.

Her research interests focus on investigating the relationship between nutrition and the risk of chronic pathological conditions, as revealed by a) the recording of dietary habits and the evaluation of dietary patterns for various population groups, and b) the understanding of the participation of food components in the modification of the physiological function of the body, through the analysis of biological fluids. Her interests also relate to the investigation of the integration of functional foods into a balanced diet, as well as the implementation of innovative processes for the optimization of the biofunctional characteristics of traditional products.

Within the framework of the interdisciplinary approach to research topics, she has developed collaborations with public and private bodies. To date, she has published 98 scientific papers in international and Greek journals and conference proceedings, including 28 in international SCI journals and 4 in collective volumes. She has participated with presentations of papers in 60 national and international scientific conferences.
